The much-anticipated butchery in Loyal Heights, Beast & Cleaver, will open its doors tomorrow, Dec. 31.
The neighborhood butcher is opening at 2362 NW 80th St, just next to Larsen’s Bakery and the Fresh Fish Co. Owner Kevin Smith shared the details in a newsletter today, saying they’ve passed all inspections and have begun stocking the shop.
“We have passed our health inspection, we almost understand our POS system, and most importantly – we have meat in the shop!” Smith writes.
Smith says they’ll be opening on Tuesday, but will close on New Year’s Day, and will reopen on the 2nd. Their regular hours will be Tuesday to Saturday, 10am to 7pm, and Sunday 10am to 5pm.
Eventually, Beast & Cleaver will offer butchery classes and serve lunch and dinner, but the plan is to start slowly, with just butchery items to start. Smith says they’ll begin lunch service on the weekends later in January, and will offer lunch every day soon thereafter.
Their classes and dinner schedules will be released in the coming days, and their monthly butcher boxes will start in the next few weeks.
“We’ve said it before, but this has truly been a labor of love and we can not wait to share the art and craft of butchery and cookery with you all,” Smith writes.

Amazing pate, especially the en croute! Thanks Kevin – our NYE guests couldn’t get enough. We’ll definitely be back.
Foie gras I hope.
