Beast and Cleaver to bring its famous burgers to Fair Isle Brewing

The local Loyal Heights butchery Beast and Cleaver has announced it will be expanding to Fair Isle Brewing.

Beast and Cleaver owner Kevin Smith has been operating a burger pop-up called Beast once a month, which always sells out. But now he’s bringing his burgers to Fair Isle Brewing in a more permanent way: The new spot, according to the Seattle Times, will be called Beast & Cleaver 49th Street (aka 49th Street Beast).

Executive chef Jaimon Westing will run Fair Isle’s Beast, with plans to serve bar bites and smoked veggies alongside burgers. There will be just 10 items on the menu, with burgers as the main event. The burgers, named by some to be the best in the city, are dry-aged for over three months at Beast and Cleaver’s butcher shop.

“Yes, our signature 100 day dry aged burger will be available in limited quantities, but we are really looking forward to showcasing the art of fermentation, smoked vegetables, modern & classic cookery, and of course dry aged meats,” Smith wrote on Instagram.

The new location is expected to open in late July.
